Amber Restaurant at the Scotch Whisky Experience toptable Dining Awards 2010 - Runner-up: Best for Parties. Amber is a paragon of all that’s great about Scottish food and drink. Housed between the old stone walls of the Scottish Scotch Whisky Experience in Edinburgh, it offers seriously sophisticated tribute to Scotland's culinary traditions. Just read these typical dishes: choux pastry with woodland mushrooms and sloe berry jelly, fillet of Buccleuch beef with rich wild mushroom and truffle sauce, honey-roasted courgette filled with Inverloch goats cheese and sun-dried tomatoes…it’s glorious stuff. Whisky complements rather than dominates the menu, even though there are 300 single malts, rare aged blends (and a few surprises) to choose from. A comprehensive wine and cocktail list appeases those who aren’t attracted by the tasting menu whereby the whisky sommelier recommends a malt for each course, explains the provenance of each, and why he’s chosen them. Atrium Central to the Edinburgh dining scene, the multi-award-winning Atrium is a much talked about restaurant full of sleek sophistication. In fact, so good is it that Atrium has played host to some serious A-list stars, among them Scottish boy Billy Connolly, rocker Mick Jagger and even King of Hollywood Cool Mr Jack Nicholson. It’s no surprise that celebrities feel at home here though, Atrium is all about the attention to detail – the interior is unfussy but comfortable, contemporary and design-led with an expensive, luxury feel to every thing from the seating to the lighting. Equally the menu, on which Scotland meets the Med in sumptuous dishes, is made with only the very finest ingredients from small, local producers in keeping with the restaurant’s Slow Food approach to cookery. Bia Bistrot Coming across Bia Bistrot in the centre of Edinburgh is like discovering a rare gourmet gem. Eclectic and international, Bia Bistrot is owned by Roisin and Matthias Llorente - two chefs with Irish, Scottish, French and Spanish heritage who together have worked across the globe in a string of Michelin-starred, far-flung locations including Singapore, Geneva and New York. A labour of love, this critically acclaimed venture is an unpretentious celebration of great food, and the kitchen operates on the mantra of ‘fresh-seasonal-local-sustainable-home-made’... and it works. The short menu at Bia Bistrot is polished and creative, and the service here is attentive and friendly. The wine list, like the menu, is international, chic and delicious. Bisque Bar and Brasserie Like all good brasseries, Bisque on Edinburgh’s Bruntsfield Place opens all day, every day for quality drinks, snacks and meals. The airy, very trendy space is filled with unlaid wood-topped tables that the mix of young professionals and students can drink and eat at, or just the former, without fuss. The Bisque day starts at 7am with an all-day menu of traditional dishes made with local and fair-trade as much as possible… Ayrshire bacon, Loch Fyne mussels, Scottish smoked salmon, lamb, cheeses and, of course, prime Aberdeen Angus steaks. Come summer, snack-like antipasti and tapas dishes fly out of the kitchen, and the relaxed crowd spills outside with its beers and after-work cocktails to the courtyard garden.
